RICE FLOUR FLATBREAD WITH VEGETABLES

Makes 10 to 12 rotis Chataamari Roti

Chataamari is a traditional Newari rice flour bread, made from a rice flour batter topped with seasoned ground meats, eggs, vegetables, or just plain sprinkled with sugar. It is also referred to as Newari pizza, rice pancake, or Newari crepe. It has become a popular snack food or can be served as a light lunch. The bread is delicious plain or can be served with vegetables, pickles, and chutney. Here is my version with a vegetable topping.

2 cups rice flour (chaamal ko pitho)

¾ cup urad bean flour (maas ko pitho)

1 teaspoon salt, adjust to taste

2 medium tomatoes, chopped (about 2 cups)

1 medium red onion, finely chopped (about 1 cup)

1 small red or green bell pepper, cored and finely chopped (about 1 cup)

4 to 5 green onions (white and pale green parts), finely chopped

½ cup finely chopped cilantro

2 to 3 fresh hot green chilies, chopped

½ cup clarified butter (gheu), melted
